Raspberry Mousse filled Donuts

In the USA Today it’s National Donut Day and what better way to celebrate than to make DONUTS!!! My husband isn’t a fan of jam fillings but I love the fruits taste. So I figured if I make a mousse filling he might actually eat it! And guess what! ITS WORKED! I made a raspberry mousse only because I love the tartness of the raspberries and always think that goes so well with the sweet donut. 🙂 it’s take a little time to make but it’s well worth it!

Here’s how you bake it!


For the Donut –

For the Raspberry Mousse Filling –

  • 285g frozen raspberries
  • 1/2 cup granulated sugar
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp powdered gelatin (or agar agar)
  • 3 cups heavy whipping cream
  • 6 Tbsp icing sugar


For the Donut –

For the Raspberry Mousse Filling –

  1. In a medium sauce pan, combine the frozen raspberries and the sugar. Cook stirring occasionally until jam consistency. Remove from heat and strain through sieve, pushing on the back with a spatula to get all of the juice possible. Off the heat, stir in 2 Tbsp lemon juice and 1 Tbsp gelatin. Pour back into saucepan and place over medium heat, whisk until gelatin dissolved and mixture is hot (not boiling). Remove from heat and cool to room temp (transfer to a different bowl to cool faster) and don’t let it sit too long once it’s at room temp or it will thicken and become difficult to blend.
  1. Once raspberry syrup is at room temp, beat 3 cups heavy cream with 6 Tbsp powderd sugar on high speed 2 minutes or until whipped and fluffy (do not overbeat or it will turn buttery).Transfer it to a pastry bag and refrigerate until ready to use.

Assembly –

Once the donuts are fried and cooled , take your piping bag and pipe in the mousse filling pushing through one side of the donut. You should be able to feel the weight of the donut increase slightly, and when you feel it’s filled take the piping bag out and repeat with the other donuts.

And voila! Your raspberry mousse donuts are ready to be devoured!!
