Theres nothing like a donut. And especially if you can skip all the oily part, then its even better! Here is a seasonal fall treat – a Pumpkin Baked Donut with some sugary pumpkin spice mix on top! Its made with pumpkin puree and is just super yummy to say no to! Its very easy to bake, and literally only take 10 min to make the batter! So make sure to give it a try!
Here’s how you bake it!
INGREDIENTS:
For the Pumpkin Donuts :
- 1 cup plus 1/4 cups flour
- 1/2 cup light brown sugar, packed
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/4 cup pumpkin puree – (I made my own by just chopping the pumpkin into small pieces, boiling it in some water for 15 minutes, then puree’ing it with a blender. – You can easily buy the canned ready made version as well.)
- 2 1/2 tablespoons unsalted butter, melted
- 1/2 cup almond milk (Don’t worry if you don’t have almond milk, i like it for the taste, but regular whole milk works just as good!)
- For the Cinnamon sugar coating:
- 3 tablespoons unsalted butter, melted
- 1 cup sugar
- 1 1/2 tablespoons cinnamon
For the Pumpkin Spice sugar coating :
- 3 tablespoons unsalted butter, melted
- 1 cup brown sugar
- 1 1/2 tblsp pumpkin spice mix – click here for the recipe (VERY EASY TO MAKE AT HOME!) .
METHOD:
- Preheat oven to 175C.
- Generously grease a doughnut pan with some butter & set aside.
- In a large bowl whisk together the dry ingredients. In a separate bowl whisk together the pumpkin puree, melted butter, and milk. Gently fold the wet mixture into the dry mixture – don’t over mix!
- Spoon (or pipe) the mixture into prepared doughnut pan, and bake for 10-11 minutes, or until the doughnuts spring back when lightly pressed. Allow doughnuts to cool a few minutes in the pan before transferring to a wire wrack to cool for a few more minutes.
- In the meantime, melt the butter for the pumpkin spice sugar coating; set aside. Mix the sugar and pumpkin spice mix together in a medium-sized bowl; set aside.
- Once the donuts are cool enough to handle, dip them in the melted butter, then roll them in the cinnamon sugar mixture; repeat until all donuts have been covered.
- These donuts are best eaten the day they are made.
