Vanilla FunFetti Cupcakes

Sometimes you’ve got to roll with the child in you. Which is what I did with these cupcakes. I was craving clean flavours, mainly vanilla, so I baked vanilla fluffy cupcakes – then i was like well it needs some depth.. so I ended up baking white chocolate Swiss buttercream – so then I thought hmm looks a bit too pale, and I opened my sprinkles drawer (yes I have a sprinkles drawer – don’t judge my shopping habits! haha I can never have enough sprinkles!) And saw my funfetti multi-coloured sprinkles, and thought PERFECT! So these cupcakes were a result of my cravings for today! Easy Peasy and delicious!

Here’s how you bake them!

INGREDIENTS :

For the Vanilla Cupcakes –

  • 430 g flour
  • 230 g sugar
  • 1/2 tsp salt
  • 3 tsp baking powder
  • 375 ml milk
  • 125 ml vegetable oil (I use sunflower oil, but any veggie oil works)
  • 125 g unsalted butter, softened
  • 2 tbsp Turkish yogurt
  • 1 tsp vanilla extract
  • 2 large eggs (or 3 small ones)

METHOD :

For the Vanilla Cupcakes –

  1. In a stand mixer (or a large bowl with a hand held mixer) beat the butter until it softens. Then add the sugar and whisk until combined thoroughly (roughly 4 min)
  2. Add all the dry ingredients in and mix until combined.
  3. In a small bowl add all the wet ingredients, and just give it a light whisk with a fork, then pour it into the bowl with the dry ingredients and butter/sugar. Whisk until combined. You shouldn’t whisk for more than 5 min.
  4. Grab your cupcake case, & using an ice cream scooper (i do this only because its easier and the cupcakes come out equal in size and shape) – scoop one scoop in each cupcake case.
  5. Bake in the oven for 20-22 min. until a cupcake tester comes out clean.
  6. Leave them to cool completely before piping the topping on.

Garnish – add some sprinkles into the buttercream and on top for decoration.
