VEGAN Double Chocolate Loaf Cake

Its the beginning of a New Year, and hopefully a better one than last year! So in this new year the best thing to start off with is obvious choice – CHOCOLATE !! And well I’m sure everyone has some sort of resolution, and in the heat of all those resolutions, i decided to do a live baking session on my Instagram account – for a vegan chocolate loaf cake. Many of you saw me baking it live, asked some wonderful questions and baked with me. So happy for that! 🙂

It’s a very easy peasy bake, and doesnt even take 10 min to put together. The rest of the bake is up to the oven to do! Which is awesome!

So here is how you bake it! (Recept på svenska följer nedan)

INGREDIENTS :

  • 3/4 cup (177ml) plant based milk (i used almond milk)
  • 3/4 cup (96g) unsweetened apple sauce
  • 1/3 cup (79ml) canola oil (or any veg oil)
  • 2 tsp vanilla extract
  • 1 1/2 (217g) cup flour
  • 1/2 cup (64g) cocoa powder
  • 1/2 cup (64g) brown sugar
  • 1/4 cup (32g) sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (128g) dairy-free dark chocolate chips/chunks

METHOD :

  1. Turn oven on to 177C (350F) and line a loaf tin with baking paper.
  2. In a large bowl, mix all the wet ingredients, along with the brown sugar and white sugar until mixed thoroughly.
  3. In a small bowl mix all the dry ingredients.
  4. Add in the dry ingredients into the wet, and whisk until thoroughly mixed together. Then fold in the chocolate chunks with a spatula.
  5. Pour the batter into the prepared loaf tin and bake in the center of the oven for 55-60min or until your knife/cake tester comes out either clean or with a few crumbs on.
  6. Take it out of the oven and let it cool in the loaf tin for at least 20 min before removing and eating.
  7. Enjoy with some whipped cream. You can store this cake by wrapping it in plastic wrap for up to two weeks in the fridge.

SVENSKA

INGREDIENSER:

  • 3/4 cup (177ml) plant baserat mjölk (jag använde mandelmjölk)
  • 3/4 cup (96g) osötad äpplemos
  • 1/3 cup (79ml) vegetabilisk olja (raps olja går bra)
  • 2 tsp vaniljextrakt
  • 1 1/2 (217g) cup mjöl
  • 1/2 cup (64g) kakaopulver
  • 1/2 cup (64g) brunsocker
  • 1/4 cup (32g) socker (vit)
  • 1 tsp bikarbonat
  • 1/2 tsp bakpulver
  • 1/2 tsp salt
  • 1 cup (128g) mjölkfritt choklad, hackad

HUR MAN GÖR :

  1. Sätt ungnen på 177C och lägg bakplåtspapper i en brödpanna.
  2. I en stor skål, blanda all våta ingredienser tillsammans med både socker. Blanda ordentligt.
  3. I en liten bunke, blanda alla torra ingredienser. Häll torra ingredienser i med dem våta och blanda ordentligt.
  4. Häll i hackad choklad, blanda.
  5. Häll smeten i pannan och grädda mitt i ugnen, ca 55-60min. Ta ut och låt vila i pannan för 20 min, minst.
  6. Skära och njuta med lite vispgrädde.
