Its mid feb, and even though there are rays of sun in the south of Sweden (where I live) the cold wintery breeze is still around. Which only means that cozy foods for the tummy is always on the menu! And therefor, a classic apple pie is PERFECT for dessert! Have it with vanilla ice cream, caramel sauce, or vanilla chantilly cream, either way its just a perfect end to the day. 🙂 Its an easy bake, just takes a little bit of time, but that’s probably because i peel apples REALLY slowly! lol i’m terrible at peeling them.. takes ages! If you don’t count the peeling time then it all pretty much goes fast. And the rest is up to the oven! 🙂
Here’s how you make it!
INGREDIENTS:
Filling –
- 10-12 apples, peeled and cubed (you can slice them if you like, i like chunks so u keep them cubed) Tart apples are best!
- 150g sugar
- 4 tbsp cornflour (or maizena)
- 1 tbs fresh lemon juice
- 1-2 tsp cinnamon
- 1/2 tsp nutmeg
- 1tsp vanilla
Pie Crust –
- 300g (2 1/2 cup) flour
- 225g (1 cup) butter, chilled (its very important that the butter is very cold)
- 1 tsp salt
- 6-7 tbs ice cold water
METHOD:
Pie Crust –
- In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Cut into half and wrap in plastic and refrigerate for minimum 40 min (or for best results overnight)
- Roll one of the dough balls out to fit a 9 inch pie plate. Place crust evenly in pie plate, leave a little on the sides as an overhang. Place the pie plate into the fridge until it the filling is ready.
Filling & Baking –
- Turn the oven on at 200 C.
- In a bowl place all ingredients for the filling and stir until everything is well coated and combined.
- Once the filling is complete, take out the pie plate and fill with the filling. It will seem like a lot of filling, and i like my pie’s to be high, however if you feel its too high, then you can bake two pies.
- Take out the second pie dough, and roll it out, place on top of the apple filling, crimp the sides, slice four slits at the top for some steam to release while baking.
- Brush with egg wash, and sprinkle some sugar and cinnamon on top for a little extra flavor and crunch.
- Bake the pie for 50-60 minutes. Once the pie is ready let it sit for about 1-2 hours before slicing into it to let all the juices come together.
- Enjoy with some vanilla ice cream!
