Red Velvet Belgian Waffles

Its nearly Waffle day in Sweden (tomorrow March 25th) and I’ve been looking forward to it as I love waffles!!! This time I decided to amp things up a bit and try out a red velvet version.. and my oh my did they taste delicious!!!!! The recipe is so easy and quick to whip up so give it a try!!

Here’s how you make it!

INGREDIENTS:

  • 272g (2 cups) flour
  • 50g (1/4 cup) sugar
  • 1 tbsp plus 1 tsp baking powder
  • 2 tbsp cocoa powder
  • 1/2 tsp salt
  • 420ml (1 3/4 cups) buttermilk (if you don’t have buttermilk- that’s 400ml regular milk mixed with 20ml lemon juice)
  • 76g (1/3 cup) butter melted and cooled
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 tsp apple cider vinegar
  • 2 tbsp red food coloring

METHOD :

  1. Whisk the flour, sugar, baking powder, cocoa and salt in a large bowl, set aside. In separate medium bowl, beat the buttermilk, melted butter, eggs, vanilla and vinegar together until smooth, then stir in the red food coloring. Add the buttermilk mixture to the dry ingredients and whisk until smooth.
  1. Pour the batter onto your hot waffle iron and cook according to manufacturer’s directions – mine basically has a setting for color – so if I set it to brown then the light switches off – roughly 5-7 min.
  1. Serve immediately with butter, syrup, powdered sugar, cream cheese frosting or any other favorite toppings.
