It’s a very strange time right now around the world. We are all stuck indoors and need to be very careful of going outside into crowds because of the Corona virus. However, I am the kind of person that just can’t sit still. So, I bake! And what better way to cheer myself , and my neighbours up than to bake a cake! Fit fro easter, spring, and happy days! This is a very simple cake to bake, so all of you sitting at home can definitely do it! 🙂 its coconutty, and vanilla’y soft, and spongey! Perfect to say the least! 🙂
Here’s how you bake it!
INGREDIENTS :
For the Coconut Cake –
- 100 g butter, at room temp
- 260 g flour
- 1 tbsp baking powder
- 1/4 tsp salt
- 300 g sugar
- 3 large eggs
- 240 g coconut milk
- 1 tsp vanilla
For the Frosting –
- 100 g butter, at room temp
- 150 g cream cheese, at room temp
- 600 g icing sugar
- 1/2 tsp vanilla
- 1/4 tsp salt
- 60 g whipping cream
- Blue food colouring (optional)
- Black food colouring (optional)
- Paint brush – to decorate with (optional)
METHOD :
For the Cake –
- Pre-heat your oven at 180 C. Butter and line (with baking paper) three 6 inch pans, or you can bake it in one tin and then slice it into three.
- In a medium bowl at medium speed beat together butter and sugar for 2 minutes until combined then add eggs and beat, combine well.
- In a medium bowl whisk together flour, baking powder and salt. then gradually add flour mixture, beating on low until combined. Add milk and vanilla and continue beating until combined.
- Divide batter into prepared pans. Bake until golden (when you insert a cake tester or knife, it comes out clean) approximately 30-35 minutes. Remove and let cool completely on wire racks.
For the Frosting –
- In a medium bowl beat together butter and cream cheese on medium-high speed until creamy approximately 1 minute. Lower speed to medium and add powdered sugar, 1 cup at a time, beat well after each addition. Add salt, cream and vanilla and beat until fluffy, about 3 minutes. Add in a few drops of the blue food colouring (optional) and whisk for 1 minute until the colour is evenly distributed.
- To frost the cake, place the first layer on a large plate top side down, spread evenly with frosting, place the second cake top side down and frost, then with the third layer on top with remaining frosting. Frost the outside of the cake as well.
- (Optional) In a small bowl, place two drops of black food colouring, as a few drops of cold water and mix until it becomes wet. Take your brush dip it in the black colour, and the either flick around the cake to get small speckles, or run the bristles of the brush with your thumb/finger so the speckles fall straight on to the cake.
And there you have it! your Spring/Easter cake is ready! Enjoy!
