Strawberry Budapest Roll

It’s officially summer in Sweden. Every day is between 22-25C and some days even 27C! So what better way enjoy the summer days with some refreshing cake, not just any cake, something cool, and creamy with fresh berries. A Budapest roll! Now a traditional Budapest is made with hazelnuts and oranges, but ive decided to change it up and use almonds and strawberries instead. I also added some chocolate chips, because well.. I LOVE chocolate ! 🙂 However that’s completely optional. This is literally the easiest cake ever, that can be shared with many and loved by all! So give it a go during these warm sunny days ! 🙂

Here’s how you bake it!

INGREDIENTS :

For the Roll –

  • 250g Egg Whites (roughly 6-7 egg whites) , cold
  • 325g Sugar
  • 200g ground Almonds (or if you prefer hazelnuts)

Filling –

  • 500ml (5dl) heavy cream, cold
  • 250g mascarpone, cold
  • 100g icing sugar
  • 2 tsp Vanilla, essence or from a pod
  • 300g diced strawberries, some extra for decorating (optional)
  • 4 tbsp chocolate chips (optional)
  • 2 tbsp almond flakes for decorating (optional)
  • icing sugar and freeze dried strawberries for decorating (optional)

METHOD :

For the roll –

  1. Turn oven to 160C (320F). Line a baking tray with baking or parchment paper.
  2. Whip the egg whites in a stand mixer or with an electric mixer until frothy. Then add in the sugar and whip on high until a thick glossy merengue.
  3. Pour in the ground almonds (or hazelnuts) and fold gently until thoroughly combined.
  4. Place into a piping bag and pipe is straight lines along the long side of the baking pan until the baking sheet is covered (see image below).
  5. Bake for 25 min (or until light golden brown) at 160C (325F). Take out and let cool completely before flipping over and taking off the baking paper.

Make the filling –

  1. Pour the cream into a stand mixer or use a hand held electric mixer. Whip until thick, add in the icing sugar, mascarpone and vanilla. Whip until thoroughly combined.

Assembly –

  1. Spread an even layer of the filling, and then sprinkle evenly the strawberries. You can add chocolate chips (I did) if you want evenly as well.
  2. Then start rolling gently by starting from the long edge farthest from you. And by using the baking paper to roll it towards you. keep going gently until you reach the end. Then dust with icing sugar and freeze dried strawberries (optional) and decorate with strawberries, chocolate chips and almond flakes (optional). You cans tore this in the fridge for two nights or even freeze it for a month by wrapping is with plastic wrap.
