I’ve been so busy trying to handle being a new mommy with a one year old. Plus I’ve had some orders and blogging… all things at once can be overwhelming and all I can think of is baking! Baking for me! I don’t have much time to set for myself on the side these days so I was thinking of something that is fast and tasty.. and a galette came to mind. A galette is basically a pie, but in like a tart form..the pie crust is rolled out and the filling is spread int he middle.. Fillings are not as much and not as wet.. and you just fold in the edges.. and bake! It’s a super easy to bake.. because my pie crust is done within minutes, and while it chills in the fridge.. you make your filling. One of my favourite fruits is a strawberry, and since they are in stores everywhere, just telling me to buy and eat them.. i decided to make a strawberry almond galette.. and yes it turned out deliciously!

Here’s how you bake it!
INGREDIENTS :
Pie Base –
- 172 g flour
- 113 g butter, chilled (its very important that the butter is very cold)
- 1/2 tsp salt
- 3-4 tbsp ice cold water
Strawberry & Almond Filling –
- 300 g strawberries, sliced
- 3 tbsp cornflour (or maizena)
- Juice of half a lemon
- a good pinch of sea salt
- 1 tsp cardamom (optional)
- 100 g almond paste
- 2 tbsp milk or cream
METHOD :
Pie Crust –
- In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Cut into half and wrap in plastic and refrigerate for minimum 30-40 min. Meanwhile you can get your filling ready.
Strawberry & Almond Filling –
- In a small bowl, grate the almond paste and add the milk (or cream). Mix until it becomes a paste. Keep aside.
- In a medium sized bowl, add all other ingredients and mix carefully without breaking the strawberries.. until everything is combined and coated.
Assembly –
- Bring out the pastry, and roll it out onto a baking paper. Spread the almond paste mixture evenly to the edges. Then place the strawberries in any way you like on, but making sure you leave an inch from the sides. Fold in the edges, just to cover the edges of the strawberries. Brush the sides with egg wash and if you like an extra crunch like me, sprinkle some brown sugar over the edges and in the middle. Add small dobs of butter and bake for 30-40 min. until the edges are crispy brown. Don’t worry if the juices from the centre come out.. its all part of the baking process! 😉
Take out form the over and let it cool completely before eating! Enjoy with a nice vanilla ice cream 🙂 ENJOY!
